The ones I have bought are tough and as an extra added attraction have bits of bone shards all through them. ;-( I think the butchers in the Aude cut them up with chain saws or bush axes, or maybe even sledge hammers and pocket knives. Whenever we buy pork chops we have to pick them over carefully before cooking them to remove... |
