I have found French pork chops to be dissapointing. The ones I have bought are tough and as an extra added attraction have bits of bone shards all through them. ;-( I think the butchers in the Aude cut them up with chain saws or bush axes, or maybe even sledge hammers and pocket knives. Whenever we buy pork chops we have to pick them over carefully before cooking them to remove the bits of bone embedded in the meat. Many of the bones are just smashed, with ragged edges and bits of crumbling bone falling out. I'm hoping that this is not the case everywhere in France. Locals here consider the Aude a bit backward about just about everything. The other cute trick is to have them about 4 cm thick at one end and 1 cm which at the other.
