Properly installed grout (which is not much different than concrete) should not be affected by water, especially in the ammounts you'd get on a backsplash. Many swimming pools are lined with grouted ceramic tile! If the grout deteriorated on your backsplash, the most likely cause was improper prep, mixing or installation. The main reason for sealing grout is to protect it from staining and/or mildew.
