Yes you can. In addition to the extensive shoring and bracing, jack platforms, lumber, siding, trim, and plastering there is also the need to cut and rework the plumbing, electrical, heating, and the staircase has to be extended (read: new staircase). Plus anything else that passes from first to second floor. It is quite involved and therefore quite expensive. I just read an article in a trade mag where a contractor did just that. They took their time, used a lot of manpower, and took every precaution. They where fortunate in that the homeowner was doing a whole house remodel anyway. They said it added $110,000 to the price of the project. After reading the step by step involved that started sounding awful cheap to me!
