Stick construction just requires some men to lift the boards. Pick-up-sticks construction? They don't just lift them, they have to put them together. That takes time ($$$). Even with the cost of a crane, there's no way that hand-built roofs in the field can be cheaper than factory built roof trusses unless you're talking about building _one_ house with cheap labour.
