You *always* want to cover end grain that is perpendicular to the fall of rain water. As you noted, you also need to use 2x blocking under the over-hang which provides structure to the 'box' you are creating under the eaves of the gable ends. The blocking gives you structure to support the fascia and the soffit which will be nailed to the blocking.
