some other posters have discussed that minimal sanding should be necessary with good application, and that's very true. It sounds like you have all the mud already up, unfortunately. I saw a guy doing a wet method once, sponging the mud kind of quickly to get a shallow layer moistened. Then using a wide knife at a high angle to scape off the high spots. Never tried it myself, but seemed to work reasonably well when I was watching. If you are way out of flat, this method probably wouldn't help much.
