Hey, man! I have done it before on my old house in Illinois, where I used to be in Bricklayers Local #8) Use some acid or sure kleen like when you rub and wash a wall let it soak in for a minute or two. Then use a rke jointer, chisel, grinder etc... to clean out approx 1". When the joints are carved then wash off all acid... The biggest arguement I have found is that the old and new mortar as a rule don't bond. This is true if you are using regular mix. I used high pressure non shrink grout with a little sand, and concrete glue/ bonding agent. About 1/4 gallon of glue per 5gal bucket. I then just used my larger trowel like a hawk and my concave/ round jointer to slick it up. Just like any wall after I washed and rubbed it I still had to fill bee holes, but nothing bad, and mostly wher I started to hurry.
