Search on "NEC 220-31 Load calculation" for examples on how to calculate the load requirements of your house. It's a bit confusing at first but after looking at some examples it became clear to me. This calculation will tell you if the service panel is sized correctly. If you get a permit for your work and it is inspected and signed off by a city inspector, I can't see how any insurance company could say that the wiring could cause a problem. The extra cost of the permit is for CYA (Cover your Ass) purposes.
