I think the reason for this design is so that when the BBQ is alight then the heat will dry out the clay below causing it to shrink. If the footing has a toe, as you are suggesting, then this is a design to retain the heat direction to downward as opposed to an outward direction causing a larger area to dry out and possible shrinkage and subsidence. The area may only be dry for short periods but if that is and area that is equally being walked on then this may create a rotational failure in the footing and worse stil further detrimental failing may follow.
