Some of the houses are just hollowed-out spires, but none of those is used as a hotel that I know of. One of my faves (if it's still standing) is the hotel/restaurant/bakery in Barhal (Altiparmak) near Artvin in Turkey - the building is partly cantilevered out over one of the fastest rivers in the world (serious whitewater rafting territory). Looking down the toilet gives you a view down a channel of rough planks into a roaring torrent.
