Airlines ain't selling paint. They're selling inventory. Paint stores have stacks--if not warehouses--of inventory, and every now and then somebody has to run out and painstakingly count each can. Airlines don't have to have somebody run out and count each seat: they have (and very much NEED to have) computers that have every seat, on every flight, in every market, inventoried. If paint stores could have a computer give an individual price to each can--based upon supply and demand--they would adapt to the opportunity and do the same--but given the molecular permanence of their product, they can let dozens, if not hundreds, or even thousands of cans of their "inventory" sit in a warehouse for days, months, even years.
