I think one of the 'joints' you mentioned is right across the street from the hostel I usually stay at; 'convenient' yes; but you'll find few other than tourists there for a reason... Centraal is the best bong for the buck; you select and are not 'served' from a menu; prix fix quality/quantity with dozens of choices.
