We had a very nice Poulet de Bresse in Bourge en Bresse, with morilles and a nice sauce. It is hard to find a Poulet de Bresse in Paris (mostly found around Christmas) and I would never think of preparing it at home. Basically restaurant food should be "orthogonal" to home cooking. |
