Some ideas: 1) Stuttgart itself has several castles: http://www.stuttgart.de/sde/menu/frame/ns_top_11049_11050.htm But not really what you're looking for, I'm afraid, they're either closed off or used as museums. Though nice to wander around. 2) You could have a look at Burg Hohenzollern: http://www.preussen.de/de/heute/burg_hohenzollern.html It's close to Tübingen, about a 1hour drive by car from Stuttgart.
